Cometa comes from the creators of Carousel.


Get ready for a taste of Mexico. Cometa has announced that it will open on Charlotte Street, London, in February 2026. The restaurant is the latest venture from the founders of Carousel, Ed and Ollie Templeton.

Carousel has long prided itself on its chef collaborations, many of which have been with Mexican chefs. So, it comes as no surprise that the pair are now launching their own Mexican restaurant. Cometa will be located in the former Carousel wine bar, which is currently undergoing a full redesign.

Ed says: “There’s been a Mexican heartbeat to our kitchen for several years now. Opening Cometa felt like the natural next step for us.”

Cometa will focus on contemporary Mexican seafood, drawing inspiration from Mexico City’s Contramar and New York’s The Four Horsemen. Ollie will be leading the kitchen, joined by chefs José Lizarralde Serralde and Alejandra Juarez.

The full menu has yet to be revealed, but dishes will range from ceviches and aguachiles to larger plates such as crab chilpachole rice with brown butter and chive, and lobster served with chintextle — a smoked chilli paste. The drinks list will feature a Mezcal Old Fashioned, a spicy margarita, and house-made aguas frescas.

If you can’t wait, then head to Carousel. The space is more than just a restaurant and bar, and includes events and a workshop. The ever-changing line-up of chefs makes the space feel fresh. So far, there have been more than 350 from 80 different countries.
