London, we have some tasty news. The chef and co-owner of Trullo in Islington is opening a new restaurant. Burro will showcase Italian food and will be his first solo venture. Scheduled to open in early 2026, here’s what you need to know.
Burro will be located in Floral Court, Covent Garden. The restaurant will take over the site formerly occupied by Petersham Nurseries, which closed its central London restaurants. It will also boast a tucked-away terrace in the heart of the capital.
Burro will celebrate Italian cooking while fusing cultures. In Italian, the name refers to butter and is often used figuratively as a descriptor. The design, inspired by Conor’s Irish heritage, aims to blend an Irish kitchen with a 1950s Italian bistro.
The full menu has not yet been unveiled. So far, we know there will be small plates ranging from Bruschetta with Venetian Chicken Livers to Crisp Fried Artichokes topped with bottarga and chilli. Pastas will include Tagliatelle with duck and porcini ragù, and Roman Fettuccine Alfredo. Desserts will feature Tiramisu Bomboloni Doughnuts.
If you can’t wait, make sure you head to Trullo. The restaurant prides itself on offering authentic Italian flavours and simple, seasonal cooking. The pasta is handmade, with dishes including Agnolotti of pheasant and chestnut, Fettuccine with smoked Devon eel, and Pappardelle with beef. Grilled dishes include 28-day Aged Hereford Chateaubriand, Brixham Monkfish Tail and Dorset Lamb Rump.
