The new restaurant will open in February.
London will soon welcome a new Italian restaurant, Osteria Vibrato. Charlie Mellor is opening it on Greek Street in Soho, with doors scheduled to open in February. Here’s what to expect from his latest venture.
In Italian, the word osteria refers to a cosy tavern that you would find in the country, and vibrato is a musical term for rapid oscillation. Meanwhile, Gaia Enria is creating the menu for Osteria Vibrato. She founded the recently closed Burro e Salvia on Redchurch Street in Shoreditch. Charlie Mellor, known for his former Hackney Road spot The Laughing Heart, will lead the project. The menu will focus on simplicity, while the restaurant itself takes over the site most recently occupied by Cinquecento Pizzeria.
Charlie explained: "I decided that the London dining scene needs an injection of romance, nostalgia, warmth and generosity. I started thinking that Soho was due a revival. I wanted to be there in the mix with the carnage, the chaos and the heavy hitters of our industry. Ideas and inspiration struck like lightning."
Although the full menu remains under wraps, Osteria Vibrato will feature antipasti, cured meats, fiordilatte mozzarella, daily rolled pasta, and shareable small plates. Lunchtime will include a fixed-price menu with antipasti, primi, and dolce.
The kitchen serves everything from Brodo di Vasto to freshly made Amaretti biscuits — both requiring pre-orders. The chefs will cook Brodo di Vasto, a seafood stew inspired by Italy’s Abruzzo region, and bake the Amaretti biscuits to order, which will take about 20 minutes to make.
Diners can expect high-quality olive oils, aged Parmesan, and freshly baked bread. The drinks list will specialise in wine, featuring 250 bottles with an emphasis on classic styles.
