Nieves will work her magic at The Donovan Bar.
Spanish chef Nieves Barragán Mohacho is heading to The Donovan Bar at Brown's Hotel in Mayfair. She has made a name for herself on the culinary scene as the Executive Chef at Barrafina for ten years, and later launched her own restaurant, Sabor. From 9 March 2026, she will be taking over the FACT Dining Award London-nominated bar.
The Donovan Bar at Mayfair's Brown's Hotel has been hosting some impressive residencies, including Andrew Wong, Mitch Tonk and Tom Kitchin. Now, they will be welcoming Nieves, who will be bringing her MICHELIN magic to the bar.
Nieves was born and raised in Bilbao, Spain. By the age of seven, she was already preparing meals for herself. She previously worked at Fino as sous chef and head chef.

Over her career, she has shone a spotlight on Spanish cuisine, demonstrating that it is far more than just traditional tapas. In 2014, Nieves was awarded a MICHELIN Star for her work at Barrafina. While she was there, she also wrote a cookbook. In 2018, she won a MICHELIN Star for Sabor, and this year she was awarded a MICHELIN Star for Legado.
At The Donovan Bar, Nieves will be adding a selection of small plates to the menu. Dishes include Confit Artichoke with lovage aioli and arroz melosa; Porthilly Oysters finished with fino sherry emulsion and citrus oil; and Seared Tuna with silky ajo blanco. All of these are paired with cocktails by Salvatore Calabrese and the bar’s Director of Mixology, Federico Pavan.
