The founders of Brother Marcus have launched Kamara.
A new cocktail bar, Kamara, is coming to Soho, London. Tasos Gaitanos and Alex Large, the founders of the restaurant Brother Marcus in Borough, are behind the new concept. Scheduled to open in the autumn, the menu will boast Eastern Mediterranean influences and high-end cocktails.
Kamara will be located on Poland Street, in the former home of the bar Blind Pig. The venue will be able to accommodate 83 people. The space has been designed by Finch Studio. Expect rugged textures, warm tones, and earthy palettes. Features include pottery sourced from independent artisan potters in Crete, and a cave-like ceiling.

Angelos Bafas, who is behind Kioku Sake Bar, Nipperkin and Soma, has worked with the team to help develop the concept. The aim is to reflect the spirit and hospitality of the Eastern Mediterranean. The cocktails are crafted from house-macerated spirits and homemade ferments, drawing inspiration from Angelos’ and Tas’ Greek heritage.

The signature cocktails look set to be exciting. The Coffee and Honey Old Fashioned includes Michter’s bourbon, Cretan-aged eau de vie, coffee and cacao distillate, British burnt butter, Exmoor honey, and aromatic bitters. The Smoked Pepper Daisy includes Los Siete Misterios Doba-Yej mezcal, single-variety tsipouro, smoked boukovo, Kamara hay-smoked tomato spirit, crushed black pepper, and basil leaf oil. Plus, there will be wine from Greece, Georgia, and Lebanon.
The food menu will offer mezze-style options, influenced by Eastern Mediterranean cuisine. Dishes include Cod’s Roe taramasalata with sumac onion; Crispy Calamari with zhoug aioli, burnt lime and Aleppo chilli; Fried Chicken with muhammara and Greek graviera; and Greek Feta Sausage with aubergine bayildi, labneh, and zhoug.
