Four Seasons Hotel London at Tower Bridge is welcoming a new restaurant. Cooper's Cut will be located in the five-star hotel and offer a contemporary steakhouse experience. Opening in spring, here’s what to expect.
Cooper's Cut will be located at the space previously occupied by the acclaimed chef Anne-Sophie Pic. The two MICHELIN-starred restaurant La Dame Du Pic has closed after eight years of operation.
Cooper's Cut aims to be the hotel’s newest dining destination. The full menu has not yet been unveiled. So far, we know that it will feature premium cuts of beef sourced from around the world, including British grass-fed beef, Galician and Wagyu steak.
On Instagram, the team have shared a video of fresh meat being grilled on a roaring fire. The caption reads: “This March 2026, Four Seasons Tower Bridge unveils Cooper’s Cut – a modern steakhouse bringing forward-thinking flavours and a bold new energy to the City of London’s dining scene. Get ready for a fresh take on fire-driven cooking, elevated cuts, and an atmosphere that means business.”
The name pays tribute to the building’s architect, Sir Edwin Cooper. He hails from Yorkshire and has designed buildings around the country. His work includes Marylebone Town Hall, Royal Star and Garter Home, and Westminster Council House.
Four Seasons Hotel London at Tower Bridge is also home to the FACT Dining Award-nominated Mei Ume. The restaurant showcases a carefully curated Japanese and Chinese fine dining experience, which includes sushi, sashimi and Peking duck.
