Chotto Matte can be found in cities around the world, including Doha, London and Riyadh. Now, it will be opening in St Michael’s, Manchester. Scheduled to open in October 2025, it will showcase Japanese-Peruvian cuisine in a spectacular rooftop setting.

Led by Gary Neville and his team at Relentless Developments, Chotto Matte will be part of the St Michael’s £400 million redevelopment. Spanning nine floors, the site will feature a stunning rooftop space. The venue will include a 348-capacity roof terrace with 360-degree views across the city skyline.

Chotto Matte has built a global reputation for its bold design, and the Manchester location will continue that tradition. The Riyadh branch, for example, features bathrooms that light up like something from Michael Jackson’s Billie Jean video. So far, we know the Manchester venue will include graffiti-style murals by a local artist, open sushi and robata counters, and two private dining rooms.

In Japanese, the name translates to "wait a moment". Executive Chef Jordan Sclare’s menu will feature Chotto Matte’s signature dishes, including Black Cod Aji Miso, Nikkei Gyoza and Sea Bass Ceviche, all paired with carefully crafted cocktails.

Founder Kurt Zdesar is the visionary behind the concept, bringing with him an impressive track record from high-end restaurants including Hakkasan and Nobu. The concept first launched in London’s Soho in 2013 before expanding internationally.

Kurt explained: “Manchester is one of the UK’s fastest-growing cities with a booming hospitality scene – making it a perfect fit for Chotto Matte. As soon as I saw the plans for St Michael’s, I knew it was the right location. What Gary has created is vibrant, bold and sophisticated – everything our brand stands for. We’re thrilled to bring our Nikkei concept to this incredible rooftop space.”
