The restaurant is undergoing a MICHELIN makeover.


Angelo Sato’s Humble Chicken, located in the heart of Soho, is currently undergoing renovations in preparation for a big reveal — one that could bring the restaurant its coveted third Michelin star. With reservations for July and August reopening from 18 June, Humble Chicken is firmly back on its quest for greatness.

Launched in 2021 as a yakitori spot, the restaurant evolved into a more omakase-style tasting menu experience in 2023, earning its first Michelin star in 2024, and a second in 2025. Less than a month after securing the second star, Angelo Sato closed the restaurant for what was originally planned as a one-month renovation. That closure has now extended to three months.

In a bid for the third star, the restaurant will reduce its seating capacity from 20 to 13 guests. Pricing will increase from £185 to £235, with two sittings offered at 6pm and 9pm, plus a lunchtime service on Saturdays.

Guests will now be seated at a newly installed custom-made cherrywood counter, placing them up close with the chefs for a more interactive and personal culinary experience. Plus, there will be a new custom wine and sake wall, paired with an updated 16-course omakase menu.

In an Instagram post back in February, Angelo Sato wrote: “The journey continues… A few years ago, we doubled down on our vision: Fine dining for the next generation. 2024: One Michelin star. 2025: Two Michelin stars. The team gave everything, every day. Relentless, passionate, unstoppable. I couldn’t be prouder of them and what we’ve achieved together.

"But the work isn’t finished. My dream has always been three stars, and that’s exactly what we’re coming for. To my team, our guests, and our suppliers, thank you. We gave it everything. Now, we recharge. And when we’re back, we’re coming back stronger than ever.”
