Bistronomy. If you’re wondering what the phrase means, look no further than Teal by Sally Abé. Located in Hackney, the restaurant shines a light on British ingredients and gastronomy. Now open, it prides itself on its flavour-led approach, classic dishes and a touch of childhood magic.

Sally places taste at the heart of everything she creates. Her dishes evoke a sense of comfort and nostalgia, drawing on classic British favourites while adding a fresh, contemporary touch. She is also committed to championing her suppliers, seasonality and sustainability.

The restaurant is named after Sally’s favourite bird. Starters include Baked Bone Marrow, Dorset Crab Royale, and English Peas with Lovage. Mains feature Cornish Mussels with Jersey Royals, Cauliflower and Sea Kale, alongside Haunch of Deer with Pickled Walnuts and Cavolo Nero. Desserts offer a playful nod to British traditions, from a Raspberry Marshmallow Teacake to a Marmalade Ice Cream Sandwich.

As for the design, guests are greeted by a bar lined with vintage Winchester stools, an oak counter, antique brass table lamps and bentwood chairs. The palette ranges from dark woods to vibrant pops of colour, including mustard yellow and bottle-green walls.

Sally Abé explains: “Opening Teal by Sally Abé feels incredibly special to me. It’s the first restaurant I’ve built entirely on my own, and I couldn’t be prouder. After years of working in other people’s kitchens, this is my chance to bring together my name, my values and my voice into a space that truly feels like home.

“Teal is about celebrating the very best of British food – its history, its flavours and its stories – while championing women, supporting meaningful causes, and creating something that feels part of the local community. I’m so excited to open the doors in Hackney and finally share what I’ve been working towards.”
