Waldorf Astoria London Admiralty Arch will welcome two of the world’s most celebrated chefs when it opens in 2026, with Clare Smyth and Daniel Boulud leading its signature restaurants.
London is set to welcome the new luxury hotel, Waldorf Astoria London Admiralty Arch. Set to open in 2026, the hotel has announced that Clare Smyth and Daniel Boulud will be the chef partners, and oversee the hotel’s signature restaurants.
Set within one of the capital’s most recognisable historic buildings, the restaurants will bring together two culinary powerhouses whose eponymous venues collectively hold seven Michelin stars. Their arrival will usher in a new era of modern British luxury for the Waldorf Astoria brand in the heart of London, pairing high-calibre cooking with one of the city’s grandest addresses.
The collaboration will see Waldorf Astoria London Admiralty Arch become a world class gastronomic hub. With Clare Smyth’s precise, ingredient-led approach alongside Daniel Boulud’s polished French sensibility, Coreus and Café Boulud are being conceived as destination restaurants for Londoners, hotel guests and international visitors alike.

Coreus by Clare Smyth
Located in the former home of the First Sea Lord, Coreus will be Clare Smyth’s fine dining tribute to the United Kingdom’s seas, coastlines and farms, created exclusively for Waldorf Astoria London Admiralty Arch. The concept is rooted in the building's maritime heritage, celebrating the richness of British waters and coastal regions.
Menus will spotlight sustainably sourced seafood and champion British producers, with a focus on lesser-known varieties. The offering will be complemented by exceptional meat from family-run farms, local oysters and seasonal vegetables, all treated with Smyth’s signature refinement. Clare Smyth commented: “I’m honoured to be opening Coreus at Waldorf Astoria London Admiralty Arch. Coreus will be the epitome of a modern fine-dining restaurant: relaxed, informal luxury. The name Coreus combines Core, meaning “heart” in many languages, with Us, which symbolises unity and connection. It reflects the passion and heart of everything we do, along with the collaboration between the team, guests and producers.”
Smyth will also introduce her intimate Whiskey & Seaweed bar concept to Waldorf Astoria London Admiralty Arch. Named after the cocktail inspired by her iconic ‘Potato and Roe’ dish in Notting Hill, the bar will feature a vast selection of whiskies from every distillery in the United Kingdom, alongside an extensive cocktail list and considered wine programme.
Café Boulud on the rooftop
Café Boulud will mark Daniel Boulud’s much-anticipated return to London. The all day restaurant will bring his timeless French flair to Waldorf Astoria London Admiralty Arch, beginning with breakfast that showcases Café Boulud favourites, signature pastries, speciality drinks and afternoon tea, followed by lunch and dinner menus centred around the restaurant’s hero dishes.
Set on the rooftop of Admiralty Arch, Café Boulud will feature an open, south-facing terrace with sweeping views across London’s landmarks and a direct outlook along The Mall towards Buckingham Palace. The concept is a continual exploration of Boulud’s core inspirations, offering a personal and soulful expression of his cooking. Seasonal menus will evolve throughout the year, blending French classicism and technique with contemporary, globally influenced ideas.

I have worked around the world - from New York to Singapore - but London, to me, is one of the most exciting culinary cities in the world. We can’t wait for guests to enjoy our all-day dining dishes on the rooftop of Admiralty Arch next year,” shared Daniel Boulud.
Located in Admiralty Arch, the Waldorf Astoria is housed in a Grade I listed building. The location is within walking distance of Buckingham Palace and Trafalgar Square and is steeped in history. The arch was commissioned by King Edward VII in memory of Queen Victoria. Waldorf Astoria Admiralty Arch will also include bars and a spa.
