Located in Mayfair, Igni will specialise in fire cooking.
Igni is set to light up London’s dining scene. Located on George Street, Mayfair, it is a celebration of flame-led cooking, shaped by culinary craft and curiosity. The concept has been created by the former chef and team behind the FACT Dining Award London winner, Humo, and will be located on the same site as the restaurant.
Igni has been created by Chef Theo Clench, who previously worked at the critically acclaimed restaurant Cycene. Igni builds on the momentum and ethos of Humo, which brought a new concept to London and was praised for its fire cooking, fresh take on cooking techniques, and innovative approach to ingredients.
At Igni, fire is not simply a tool, but the beating heart of the kitchen. Every dish is guided by a deep understanding of fire, requiring patience and precision. Cooking is done using wood alone — there is no gas or electricity. The setting will be striking, with an open kitchen centred around a fire. Guests will be able to watch the chefs at work and enjoy the theatrics of flame-led cooking.
The full menu has not yet been unveiled. While fire leads the way, there will be a focus on seafood, with carefully curated tasting menus available in three-, five-, and eight-course options. Dishes include a 25-year-old Pedro Ximénez; aged tuna chutoro paired with foie gras, shiso and wasabi; chiai parfait with red pepper; and a tartlet of akami with lapsang ponzu jelly.
