London is set to welcome 99 Sushi Bar & Restaurant. Scheduled to open in January 2026, it will be located in the London Hilton on Park Lane in Mayfair. If you’d like to try superb sushi, here’s what you need to know.
Fernando and Pedro de León launched the 99 Sushi Bar & Restaurant story in Spain in 2005. Since then, they’ve expanded the concept to Morocco, Monaco, Spain, and the UAE. The Abu Dhabi location has even earned one MICHELIN Star. Now, it is making its debut in London, marking the opening of the brand’s flagship in the United Kingdom.

The venue will boast a quiet confidence, situated on a street steeped in heritage and hospitality. For the first time, CEO and creative visionary Jaime Castaneda has handed over the design reins. Designer Mónica de Hostos of Borco Group will be behind the look and feel of the London restaurant.
Jaime explains: “This is 99’s most mature expression to date. The design breathes London – its density, its mystique, its quiet intensity.” The venue will feature veined black marble, emerald stone, sable limestone, and crimson velvet banquettes. Moss-covered walls add texture, while sculptural chandeliers hang like molten glass.

Guests will be able to choose from a range of options, from the intimate sushi counter to the luxury bar. The dining area will feature both indoor and outdoor spaces, as well as a terrace where you can observe the people of Mayfair passing by.
At the heart of 99 Sushi Bar & Restaurant is the menu. The concept focuses on ingredients, health-conscious choices, and seasonal offerings. Dishes include the signature sustainably farmed Atlantic bluefin tuna, prepared in various ways – from flame-seared nigiri to melt-in-the-mouth tartare. There will also be a range of carpaccios and smoky robata skewers.
