The Wei showcases food from northwest China.
Chef’s Table star Guirong Wei has announced the opening of her newest restaurant, The Wei. Located in Fulham, this marks her fifth venture in the capital. The opening is another milestone for the chef who has become one of the leading ambassadors of Shaanxi cuisine in the United Kingdom.
Born in Bohekou village near the Qin Mountains in Shaanxi province, northern China, Guirong grew up surrounded by food. From an early age, she helped her mother and grandmother gather wild herbs and pick vegetables, and those experiences shaped her deep respect for ingredients and traditional cooking.

In 2015, she opened Xi’an Impression opposite Arsenal’s Emirates Stadium with her husband, Song Yong, and restaurateur Chao Zhang. The restaurant quickly developed a loyal following for its authentic north-west Chinese flavours. In 2019, she launched Master Wei in Bloomsbury. In 2026, she opened Dream Xi’an near Tower Bridge, which is her largest project to date.
Her appearance on the Netflix show, Chef’s Table, in 2024 introduced her story to a global audience and highlighted her mission to elevate Xi’an cuisine in London while honouring her family’s heritage.
Now, The Wei brings the bold, comforting flavours of northwest China to Fulham. Inspired by the street food stalls and homestyle cooking of her childhood, the menu focuses on handmade dumplings and hand-pulled noodles. Expect dishes such as Beef Biang Biang Noodles, Stir-Fried Lamb Noodles with chilli, Tomato and Egg Noodle Soup, and Tiger Skin-Style Crispy Dumplings.
