The much-loved pop-up concept from chef Tom Geoffrey is taking over The Globe Tavern for a four-month residency.
Contemporary Cambodian restaurant Barang London is levelling up. After several sell-out pop-ups across the country, the concept is moving into its first long-term home, upstairs at The Globe Tavern in Borough Market. Running for four months from 25 November, the residency plants one of London’s most under-the-radar kitchens in one of the city’s busiest foodie hubs.
Founded by chef Tom Geoffrey, Barang London has built a loyal following for its punchy Cambodian-inspired cooking and one-night-only appearances. This autumn residency gives Geoffrey the space and time to expand his vision in a central location with serious footfall, in a room that previously hosted Khao Bird, which has now graduated to a permanent site in Soho.
Geoffrey, who previously cooked at Kiln, has spent more than eight years honing his take on Cambodian flavours. His menus are rooted in open-fire cooking, seasonal British produce, and vibrant, savoury-forward spice blends. Expect a lineup of sharing plates that are bold, smoky and built for the table.
Dishes set to appear include diver scallop with tamarind brown butter and pig’s ear crackling, laab of venison with pork fat and Khmer spices, and fried quail with kohlrabi and Khmer hot honey. Larger plates lean into the grill, with whole grilled mackerel in banana leaf with Kep dipping sauce and an ex-dairy bone-in sirloin steak served with bone marrow, prahok dripping and chilli relish.
Dessert keeps things bright and refreshing. A pineapple and galangal sorbet arrives with candied nuts and lime leaf meringue, bringing a tropical finish that still nods to spice and acidity. On the drinks front, Rachel Reid, most recently general manager at Bar Swift, oversees the cocktail list, which will feature serves such as a Kampot gin martini.
A soft launch will run from 25 to 27 November with 50 per cent off food, making it the ideal time to explore the menu. Barang has cultivated a genuinely positive reputation among chefs and diners alike, and this Borough Market residency looks set to be one of the season’s most exciting pop-ups.
